15-Minute Savoury Breakfast- Aloo Poha

Poha is a popular Indian breakfast made from flattened rice, potato, onion, peanuts, lemon juice and spices.

Poha is very easy to make, the flattened rice needs to be rinsed till softened and that's about it.

INGREDIENTS

  • 2 cups poha (thick)

  • 2 tbsp oil

  • 1/2 tsp cumin seeds

  • 1/2 tsp mustard seeds

  • 1/2 tsp turmeric powder

  • 2 tsp lemon juice

  • 1 tbsp sugar

  • Salt as per taste

  • 2 tbsp peanuts

  • 2 green chilies (finely chopped)

  • 2 tbsp cilantro (finely chopped)

  • 1 medium size potato (diced)

  • 1 medium onion (finely chopped)

  • 8 to 10 curry leaves


INSTRUCTIONS

  • In a bowl add poha (thick) . Add water and wash poha.


  • Drain poha and keep it aside. Let poha rest for 8-10 minutes.


  • Dice potatoes, finely chop onion, green chilies and cilantro.


  • Heat pan on medium high flame and add oil. Once oil is hot add cumin seeds and mustard seeds


  • Once mustard seed splutter add peanuts and diced potato and cook over medium high flame until potatoes are half cooked.


  • Add green chili, curry leaves and salt


  • Add onion, sugar, salt and turmeric powder and cook until onion are soft.


  • Lower the flame and add poha (little bit at a time) and mix poha lightly until poha are mix and yellow.


  • Switch off the flame and cover the pan with lid and let the poha rest for 2 to 3 minutes.

  • Cut lemon into half and get about 2 tsp of lemon juice.


  • Remove lid after 2-3 minutes and sprinkles some freshly chopped cilantro and lemon juice.


  • Garnish and serve poha with pomegranate, fine sev and fresh chopped cilantro.
