Beet Root Soup

Beet Root soup is wholesome, easy to make, rich in flavor and jam packed with nutrients. Soup is made with beets, zucchini, freshly grated ginger, garlic and hint of few spices. Garnish it with coconut cream, crushed pistachios and mint leaves.

IMPORTANT TIPS

  • Before blending make sure beets are fork tender and let soup cool down a little bit before using immersion blender.

  • Be careful when blending soup as it is very hot.

  • If you do not have immersion blender you can blend this soup using regular blender. Make sure you do not fill your blender past the maximum fill line.

  • I have used 4 cups vegetable broth in this recipe but you can adjust the amount based on consistency of soup you like.

  • For garnish I have use coconut cream, crushed pistachio and mint leaves. But you can garnish with your choice of toppings- croutons, roasted chickpeas, pepitas, crushed black pepper, sesame seeds, red chili flakes, crushed pecans etc.


INGREDIENTS

  • 1 tbsp Olive oil

  • 1 yellow onion

  • 1 medium potato

  • 1 zucchini

  • 3 large beets

  • 2 garlic cloves

  • 1 tbsp freshly grated ginger

  • Salt as per taste

  • 1/2 tsp cumin

  • 1/2 tsp crushed black pepper

  • 4 cups vegetable broth

Garnish

  • Coconut Cream

  • Crushed Pistachio

  • Mint

INSTRUCTIONS

  • Chopped all the vegetables- finely chopped onions, diced zucchini, and peeled and diced beets & potato


  • Heat the oil in large pot on medium high heat. Add diced onions and cook for 3 to 4 minutes until onions are softened.


  • Add potato, ginger (freshly grated), garlic (minced), salt, crushed black pepper and cumin powder. Stir 2-3 minutes or until fragrant


  • Add diced beets, zucchini and vegetable broth.


  • Turn the heat to high and bring to boil. Then reduced the heat to low, add a lid and simmer for 15 minutes or until the beets are fork tender.


  • Let soup cool down slightly before blending. Blend soup using immersion blender until creamy OR use a ladle and carefully transfer the soup to high power blender and blend for 1 minute or until creamy. You can make soup more thinner by adding water or broth.


  • Using a ladle pour soup into bowl

  • Garnish it with coconut cream, crushed pistachios, fresh mint leaves and serve
