Chia pudding with Berry compote

If you are looking for pick me up snack or craving for quick and healthy dessert then this chia pudding is perfect

Feel free to double or triple the recipe if you want to make a larger batch. I use 2 tablespoon of chia seeds for half cup of milk (this gives about 1 serving)


Chia pudding with Berry compote


Makes 2 servings


Ingredients

  • 4 tablespoons chia seeds

  • 1 cup plant based milk (I used almond milk)

  • 1 to 2 teaspoon maple syrup (or your choice of sweetener)

  • 1/4 tsp vanilla essence

  • 1 cup frozen raspberries and strawberries

  • 1 tbsp maple syrup (for berry compote)

  • 1/2 tsp lemon juice

  • Toppings- Strawberries, unsweetened coconut flakes (optional), raspberries, blueberries, pomegranate

Directions

  • Add chia seeds, plant based milk, maple syrup and vanilla essence into mason jar

  • Mix everything together and store it in refrigerator for 4 hours or overnight

  • Take frozen raspberries, strawberries, lemon juice and maple syrup and add them to a saucepan

  • Stir to combine and cook over medium heat for 8 to 10 minutes, stirring occasionally. If needed you can smash the berries to get thicker consistency.

  • Let it cool completely before storing or serving

  • Cut and add strawberries to the jar. Then add berry compote. Now add chia pudding. Add your favorite toppings
