Creamy Gochujang Pasta

This creamy gochujang pasta takes just 15 minutes to bring together and make the most delicious and easy meal. It’s perfect to add loads of flavour and you only need few ingredients to make this recipe. But feel free to add more vegetables such as spinach, mushrooms, edamame or baby corn to make this a more nutritious dish.

INGREDIENTS NEEDED FOR THIS RECIPE


Gochujang paste- Is a spicy Korean paste made from sun dried chilies packed with flavor, delicious and vegan friendly.


Pasta- I have used spaghetti pasta but you can use any pasta of your choice.


Coconut Cream- Adding coconut cream makes this pasta creamy and vegan friendly. If you are not vegan you can use heavy cream instead.


Fresh Chives- This adds fresh flavor to this recipe. But feel free to add fresh basil instead of chives.


IMPORTANT TIPS

  • Add pasta water for delicious glossy pasta, add around half cup of pasta cooking water to the gochujang sauce. It’s full of starchy goodness that will give a gorgeous gloss and thickness to the sauce.

  • I have use fresh chives but feel free to use basil or any other dry or fresh herbs of your choice.

  • I have use spaghetti pasta but feel free to use pasta of your choice.


INGREDIENTS

  • 250 grams spaghetti or any choice of pasta

  • 2 tbsp olive oil

  • 5 cloves garlic (finely minced)

  • 2tbsp gochujang paste

  • 2 tbsp tomato paste

  • 1/2 cup coconut cream

  • 1/2 cup reserved pasta water

  • Salt as per taste

  • 1 tsp crushed black pepper

  • 2 tbsp fresh chives (finely chopped)

Garnish

  • Parmesan (Vegan or Dairy)

  • Freshly crushed black pepper

  • Freshly chopped chives

INSTRUCTIONS

  • In a large pot add water, pinch of salt and 1 tsp olive oil. Bring water to boil.


  • Add pasta and cook until al dente. Drain the pasta and save about 1/2 cup pasta water.


  • Finely minced garlic cloves and finely chop chives


  • In a pan heat olive oil. Add garlic and fry for a minute or until softened and fragnant.


  • Add gochujang and tomato paste and fry for a minute or 2.


  • Pour in coconut cream, salt, freshly crushed black pepper and chives


  • Add in pasta water and cook until thickened and glossy.


  • Add pasta and mix until pasta is coated well with sauce.


  • Serve warm pasta. Garnish it with freshly crack black pepper, parmesan cheese and freshly chopped chives.
