This Creamy Kale Chickpea Curry is the BEST curry recipe I’ve ever tried! All made in one pan, this easy vegan curry is incredibly flavorful, perfect for meal prep, budget-friendly, and one of my go-to weeknight dinners!
You can never have too much of a good thing, especially when you mix things up to keep it interesting, and this definitely rings true when it comes to curry! Without a doubt it is my favorite vegan chickpea curry recipe. You will have all the ingredients in your pantry and it is incredibly easy to make.
INGREDIENTS
1 tbsp olive oil
1 medium red onion (finely diced)
2 cloves garlic (minced)
1 inch fresh ginger (peeled & grated)
1 tbsp curry powder
1/2 tsp red chili powder
1 tsp cumin powder
1/4 tsp turmeric
3 tbsp tomato paste
1/2 cup coconut cream
Water as needed
Salt as per taste
1 can chickpea (drained)
Handful of Kale (chopped)
Garnish
Lemon slices
Fresh cilantro
INSTRUCTIONS
In a pan over medium heat, add olive oil, garlic and onion. Stir until fragrant, approximately for 2 to 3 minutes
Add ginger and tomato paste. Cook for additional 5 minutes
Add all spices and mix well. Cook until fragrant.
Add chickpea and salt. Mix until everything is well coated
Add water as needed. Bring to a simmer, then lower the heat, and cook on low for 6 to 8 minutes.
Add coconut cream and stir well.
Lastly add chopped kale and stir until wilted.
Serve with basmati rice or garlic naan. Garnish with lemon slice and fresh cilantro
