I've always loved Ferrero Rocher and these no bake snacks are no exception. They are made of chocolate, hazelnut butter, almond flour and coated in a chocolate coating. They are a great way to give your healthy snacking a boost.
INGREDIENTS
1 cup almond flour
1/2 cup hazelnut butter
2 tbsp melted coconut oil (1 tbsp for dough and 1 tbsp for melting chocolate)
1/4 tsp salt
1 tsp vanilla essence
3 tbsp maple syrup
1/4 cup cacao powder
1 cup vegan chocolate chips or 1 bar of dark chocolate
1/4 cup hazelnuts (finely chopped)
25 whole roasted hazelnuts
INSTRUCTIONS
In a large mixing bowl, mix together almond flour, cacao powder and salt.
Mix dry ingredients until everything is well combined.
Add hazelnut butter, melted coconut oil, maple syrup and vanilla essence.
Mix everything until dough consistency is formed.
Using a cookie dough scoop or spoon take some dough and roll the dough into a round ball. Put a dent in the center and add 1 whole roasted hazelnut. Roll again into a round ball.
Arrange all the dough balls into a tray line with parchment paper. Refrigerate dough balls for 1 hour.
In a double boiler add dark chocolate and coconut oil and melt the chocolate.
Chop hazelnuts and add it to melted chocolate and mix it well.
Add each dough ball into melted chocolate and coat with melted chocolate and set it on a tray line with parchment paper. Refrigerate ferrero rocher bites until chocolate hardens.
Store ferrero rocher bites in an airtight container in the fridge.
