Gingerbread Granola

Lets make some ginger bread granola and turn your house into a warm spice filled magical wonderland !!!


This recipe will turn your kitchen into gingerbread bakery. Ginger, molasses, maple syrup and toasting nuts fills kitchen with great aroma as the granola bakes. Spices gives it an amazing flavor, crisp oats and shredded coconut gives crunch, and molasses and maple syrup adds a touch of sweetness!!! This is a additive (also healthy) spin on standard granola. This granola has become my personal favorite


Also this granola makes a great DIY Christmas gift (I have gifted this granola to my friends and they loved it!!!). Put it in a mason jar, add a gingerbread man cookie and wrap it up with a pretty Christmas label and there you go !!!

INGREDIENTS

  • 4 cups old fashioned rolled oats

  • 1/2 cup roughly chopped pecans

  • 1/2 cup roughly chopped hazelnuts

  • 1/4 cup roughly chopped almonds

  • 1/2 cup unsweetened shredded coconut

  • 1/4 cup dried cranberry

  • 1/2 cup candied ginger

  • 1 tablespoon ginger powder

  • 1 tablespoon cinnamon powder

  • 1 teaspoon fine sea salt

  • 1 teaspoon vanilla extract

  • 1 teaspoon ground cloves

  • 1/2 cup melted coconut oil

  • 1/4 cup molasses

  • 1/3 cup maple syrup

INSTRUCTIONS

  • Preheat oven to 325 degree Fahrenheit

  • Mix coconut oil, maple syrup, molasses and vanilla extract into a large mixing bowl

  • Ground whole cloves into powder

  • Add clove powder, ginger powder, cinnamon powder and sea salt to liquid mixture

  • Mix everything together

  • Add 4 cups of rolled oats

  • Add roughly chopped hazelnut, pecan and almonds. Also add sweetened shredded coconut

  • Mix everything well

  • Line a baking sheet with parchment paper.  Spread the mixture evenly onto baking sheet

  • Bake it for 18 to 20 minutes, stirring near the halfway point to ensure even cooking. Coconut oil will help this granola to crisp up nicely but be sure to watch it carefully as it browns quickly

  • Chopped candied ginger and mix it with cranberry

  • Remove granola from the oven let it cool for about 10 to 15 minutes

  • Add chopped candied ginger and mix evenly.


  • Let it cool completely. It will continue to crisp up as it cools

  • Store the granola in an airtight container

  • Take a ribbon and cut it. Insert it into the gift label and wrap it around the jar

  • Take a gingerbread man cookie and decorate with icing sugar and some sprinkle

  • Add cookie to the granola jar and your DIY Christmas gift is ready
