Homemade Almond Joy Bars


If you all love chocolates as much as i do then this recipe will not disappoint you. additionally they are homemade with wholesome ingredients and no artificial flavor which mean indulge guilt free !!!

Also this homemade almond joy candy bars are ridiculously simple, quick and easy to make



Creamy and nutty filling will melt into your mouth as you take bite of these homemade almond joy bar. once you make this homemade goodies you will never return to store bought stuff


I also drizzled some melted chocolate and sprinkle some sea salt on these little gems to get that perfect sweet and salty taste


We just need few simple ingredients to make this delightful treat


Almond meal and whole almond: it wouldn't be almond joy bars if we don't add almonds. If you don't have almond meal you can use whole almonds (see tips for more details)


Maple syrup: this gives much needed touch of sweetness for these little gems. you can use any other sweetener of your choice such as honey or agave syrup


Coconut oil: this gives creamy texture to filling as well as holds these almond joy bars into shape by giving it desired consistency


Dark chocolate chips: dark chocolate is my personal favorite but feel free to use any chocolate of your liking



Ingredients

  • 2 cups almond meal

  • Handful whole almonds

  • 1/4 cup maple syrup

  • 1/4 cup melted coconut oil plus 1 and 2 tbsp coconut oil (to add it to melt chocolate)

  • 1/2 tsp sea salt

  • 3/4 cup unsweetened coconut flakes

  • 2 1/2 cups dark chocolate chips


Directions

  • Line an 8 * 8 inch baking dish with parchment paper

  • In a big bowl, mix almond meal, maple syrup, sea salt and melted coconut oil and combine the mixture until it becomes soft dough

  • Transfer the mixture to baking dish. press down mixture to dish using measuring cup. freeze for 15 minutes.

  • Remove the dish from the freezer and slice the dough into bars. press down 1 whole almond to each bar. keep it back into freezer for 15 minutes

  • Add dark chocolate and 2 tbsp of coconut oil into microwave safe bowl and melt the chocolate (stir every 30 seconds or so)

  • Remove the bars and dip each bar into melted chocolate and sprinkle with sea salt (if you want). This is a messy step but end results are so yummy!!! Tip: use 2 fork to dip each bar into chocolate

  • Keep these bars to the baking sheet in the freezer until set (for about 15 minutes)

  • And that's it !!! you can store into an airtight container in the fridge for about 10 days

Tips

  • Don't have almond meal. No worries!!! simply add 2 cups of whole almond into food processor pulse until you get desire consistency.

  • I have used dark chocolate but feel free to use semi sweet or sweet chocolate or any chocolate of your liking

  • If using sweetened coconut flakes adjust the amount of maple syrup to get the desired taste
