INGREDIENTS

  • 1 cup almond flour

  • 1/4 cup pistachios (Finely chopped)

  • 3 tbsp hemp seeds

  • 1/2 cup desiccated unsweetened coconut

  • 1 tsp vanilla essence

  • 3 tsp matcha powder

  • 1/4 cup maple syrup

  • 1/2 cup cashew butter

  • Pinch of salt


INSTRUCTIONS

  • In a large mixing bowl, mix together almond flour, matcha powder, hemp seeds, chopped pistachio, shredded unsweetened coconut and salt. Mix everything.

  • Add cashew butter, vanilla essence and maple syrup. Mix everything until dough consistency is formed.

  • Using a cookie dough scoop or spoon and roll the matcha pistachio dough into round balls.

  • Roll the matcha pistachio bites in unsweetened shredded coconut or chopped pistachio. Refrigerate for 30 minutes.

  • Store matcha pistachio bites in an airtight container in the fridge.
