These vegan no bake pumpkin spice bites are a fall take on a classic! They're made with peanut butter, pumpkin puree, almond flour, maple syrup and pumpkin spice.
These pumpkin spice bites are so cute and simple to make. Make them for a Halloween party or fall get- together to impress your guests!
INGREDIENTS
3/4 cup peanut butter
1/4 cup pumpkin puree
1/4 cup maple syrup
1 cup almond flour
1 tsp pumpkin spice
1/2 tsp vanilla extract
1/4 tsp sea salt
1/4 cup sugar
15 to 20 dairy free dark chocolate chips
INSTRUCTIONS
In a large bowl, combine the peanut butter, pumpkin puree, maple syrup, almond flour, vanilla extract, pumpkin spice and sea salt.
Stir to combine until mixture is firm and easy to mold.
Prepare a parchment-lined baking sheet or large plate.
Use a small cookie scoop or your hands to roll into balls.
Roll the ball in the sugar to lightly coat it.
Use butchers twine to make 4 shallow indents on the top of the ball to form ridges like a pumpkin.
Add a chocolate chip on top to make the pumpkin stem. Repeat the same with all the balls.
Refrigerate for 30 minutes. Enjoy!
