No Bake Vegan Pumpkin Spice Bites

These vegan no bake pumpkin spice bites are a fall take on a classic! They're made with peanut butter, pumpkin puree, almond flour, maple syrup and pumpkin spice.

These pumpkin spice bites are so cute and simple to make. Make them for a Halloween party or fall get- together to impress your guests!

 

INGREDIENTS

  • 3/4 cup peanut butter

  • 1/4 cup pumpkin puree

  • 1/4 cup maple syrup

  • 1 cup almond flour

  • 1 tsp pumpkin spice

  • 1/2 tsp vanilla extract

  • 1/4 tsp sea salt

  • 1/4 cup sugar

  • 15 to 20 dairy free dark chocolate chips


INSTRUCTIONS

  • In a large bowl, combine the peanut butter, pumpkin puree, maple syrup, almond flour, vanilla extract, pumpkin spice and sea salt.

  • Stir to combine until mixture is firm and easy to mold.

  • Prepare a parchment-lined baking sheet or large plate.

  • Use a small cookie scoop or your hands to roll into balls.

  • Roll the ball in the sugar to lightly coat it.

  • Use butchers twine to make 4 shallow indents on the top of the ball to form ridges like a pumpkin.

  • Add a chocolate chip on top to make the pumpkin stem. Repeat the same with all the balls.

  • Refrigerate for 30 minutes. Enjoy!
