Paneer Paratha

Paneer Paratha is a whole wheat flatbread stuffed with Indian cottage cheese a.k.a. paneer mix with some herbs and spices. Paneer paratha is popularly served in North India for breakfast top with butter and pickle on side.

Tips to make paneer paratha

  • Use soft paneer for this recipe. You can use store bought paneer but for best result use homemade paneer. Here is my recipe for homemade paneer

  • Make sure dough is soft and smooth

  • Crumble the paneer into smaller pieces as big chunks will tear the paratha

  • Do not overfill the paratha.

 

INGREDIENTS


DOUGH

  • 2 cups wheat flour

  • 2 tsp oil

  • Water as required

  • Salt as per taste

STUFFING

  • 300 grams paneer (you can find my homemade paneer recipe here)

  • 1/2 tsp garam masala

  • 1 tsp pomegranate powder

  • 1 dry mango powder

  • 1/2 black salt

  • Salt as per taste

  • 1 green chili

  • 1 small piece ginger

  • 3 to 4 mint leaves

  • 1 finely chopped onion

  • 2 tbsp finely chopped cilantro


INSTRUCTIONS


  • In a large plate add flour, salt and oil.

  • Add water gradually and start kneading the dough. Knead a smooth soft pliable dough.

  • Cover the dough with moist cloth and let it rest for 30 minutes

  • While dough is resting in a separate bowl add paneer, all dry spices and salt

  • In mortal pestle add chili, ginger and mint and make a paste

  • Add this paste to stuffing mixture. Add finely chopped onion and coriander

  • Mix everything well with spoon or your hand so that spices are evenly mixed

  • Pinch a medium size dough ball and coat it with dry flour and shape it like a bowl using your hand and add paneer stuffing

  • Press it gently and bring the edges together

  • Sprinkle some dry flour and shape the paratha using a rolling pin

  • On a hot tawa place the rolled paratha. When the base is partially cooked, flip the paneer paratha using a spatula or tongs. Spread some ghee and flip again. You will see brown spots on the paratha

  • Flip again once or twice till both the sides of aloo paratha are cooked properly. You should see crisp brown spots on the paratha

  • Make all paratha in similar way

  • Serve hot paneer paratha with some butter on it and pickle and yogurt on the side.
