Puliyogare rice (a.k.a. Tamarind Rice) is a spicy-tangy tamarind rice that is South Indian recipe. It is known by different names in different states like puliyodarai, pulihora etc.
Puliyogare is also very commonly served as 'prasad' in South Indian temples and taste of temple tamarind rice is unmatchable.
For this recipe first you need to make Puliyogare spice mix and then Pulikaachal a.k.a. Tamarind sauce. You can make large batch of pulikaachal and store it in a fridge in glass jar. So when you want to make puliyogare (tamarind) rice you add pulikaachal to cooked rice and it is ready to serve.

INGREDIENTS
Pulikaachal (Tamarind Sauce)
3 tbsp sesame oil
1 cup tamarind
1 tbsp chana dal
1 tbsp urad dal
3 tbsp peanuts
1/2 tsp mustard seeds
2 dry red chilies
1 spring curry leaves
1/4 tsp turmeric
1 tbsp jaggery
2 tbsp puliyogare spice mix
1/4 tsp hing
1 tsp sea salt
Puliyogare Rice
1 cup cooked rice
2 to 3 tbsp pulikaachal (Tamarind Sauce)
Ghee
INSTRUCTIONS
Pulikaachal (Tamarind Sauce)
Add 1 cup tamarind into a bowl. Add hot water. Cover and keep it aside for at least 1 hour
Strain the pulp and keep it aside
Heat oil in a pan and add mustard seeds, urad dal, chana dal, dry chilies, curry leaves , peanuts and hing sauté for 1 minute
Now add tamarind pulp, turmeric powder and salt. Mix everything and cook for 10 minutes.
Add jaggery, puliyogare spice mix and cook until thicker consistency like sauce or chutney is achieved.
Once this consistency is achieved, switch off the stove. Let pulikaachal cool down before storing/serving.
Once cool down you can store pulikaachal in a jar
Puliyogare Rice
Take cooked rice in a bowl. Add 2 to 3 tbsp pulikaachal. Gently mix everything. Top it with ghee.
You can serve right away or wait for some minutes for the flavors to infuse and then serve. Enjoy
