Nothing beats a good for you pumpkin spice fall treat.
These pumpkin spice bars are made with pumpkin puree, maple syrup, peanut butter and chocolate chips. I assure you these pumpkin spice bars are going to be a snacking staple!
They're also naturally sweetened with maple syrup and infused with nutrient rich pumpkin-puree. Pumpkin spice blends add amazing fall flavour and chocolate chips add a layer of sweetness.
INGREDIENTS
1/2 cup peanut butter
1/2 cup pumpkin puree
1/2 cup maple syrup
1/4 cup almond flour
1/4 cup coconut oil
3/4 cup all purpose flour
1 tsp pumpkin spice
1 tsp vanilla extract
1/4 tsp sea salt
1/2 tsp baking soda
1/2 cup unsweetened soy milk
1/2 cup dairy free dark chocolate chips, plus more for sprinkling overtop
INSTRUCTIONS
Preheat the oven to 350 degree F. Line an 8*8 inch baking dish with a sheet of parchment paper, and lightly grease with cooking spray.
In a large bowl, combine pumpkin puree, maple syrup, peanut butter, vanilla extract, milk and coconut oil. Whisk until smooth.
Add almond flour, all purpose flour, pumpkin spice, baking powder, chocolate chips and salt.
Use a rubber spatula to mix everything.
Transfer mixture to prepared baking dish, and sprinkle extra chocolate chips overtop
Place the pan in the oven and bake it for 30 minutes or until a toothpick inserted in the center comes out mostly clean.
Let cool in the pan for 30 minutes. Use the overhangs of parchment paper to remove bars from the pan and let cool completely before slicing into 12 squares.
