Pumpkin Spice Bars

Nothing beats a good for you pumpkin spice fall treat.

These pumpkin spice bars are made with pumpkin puree, maple syrup, peanut butter and chocolate chips. I assure you these pumpkin spice bars are going to be a snacking staple!

They're also naturally sweetened with maple syrup and infused with nutrient rich pumpkin-puree. Pumpkin spice blends add amazing fall flavour and chocolate chips add a layer of sweetness.

 

INGREDIENTS

  • 1/2 cup peanut butter

  • 1/2 cup pumpkin puree

  • 1/2 cup maple syrup

  • 1/4 cup almond flour

  • 1/4 cup coconut oil

  • 3/4 cup all purpose flour

  • 1 tsp pumpkin spice

  • 1 tsp vanilla extract

  • 1/4 tsp sea salt

  • 1/2 tsp baking soda

  • 1/2 cup unsweetened soy milk

  • 1/2 cup dairy free dark chocolate chips, plus more for sprinkling overtop


INSTRUCTIONS

  • Preheat the oven to 350 degree F. Line an 8*8 inch baking dish with a sheet of parchment paper, and lightly grease with cooking spray.

  • In a large bowl, combine pumpkin puree, maple syrup, peanut butter, vanilla extract, milk and coconut oil. Whisk until smooth.

  • Add almond flour, all purpose flour, pumpkin spice, baking powder, chocolate chips and salt.

  • Use a rubber spatula to mix everything.

  • Transfer mixture to prepared baking dish, and sprinkle extra chocolate chips overtop

  • Place the pan in the oven and bake it for 30 minutes or until a toothpick inserted in the center comes out mostly clean.

  • Let cool in the pan for 30 minutes. Use the overhangs of parchment paper to remove bars from the pan and let cool completely before slicing into 12 squares.

  • Enjoy these pumpkin spice bars with a hot cup of coffee!
