Pumpkin Spice Granola

Fall is here !!! So is pumpkin spice Granola

Get all yummy fall flavors in form of healthy, vegan and nourishing pumpkin spice granola.

Enjoy it with yogurt or with milk for breakfast or can have it as a healthy snack

INGREDIENTS

  • 3 cup rolled oats

  • 1/4 cup pecans (roughly chopped)

  • 1/3 cup pepitas

  • 1/4 cup melted coconut oil

  • 1/3 cup maple syrup

  • 1/4 tsp vanilla extract

  • 1/4 cup pumpkin puree

  • 1/4 tsp sea salt

  • 1/2 tsp ginger powder

  • 1 tbsp cinnamon powder

  • 1/4 tsp clove powder

  • 1/4 tsp ground all spice

  • 1/4 tsp ground nutmeg

  • 1/3 cup dried cranberries

  • 1/2 cup toasted coconut chips

INSTRUCTIONS

  • Preheat oven to 325 degrees F.

  • Mix nuts, oats, pepitas, pecans and sea salt together in a bowl (do not mix cranberries).

  • In a separate bowl add melted coconut oil, maple syrup, vanilla extract and pumpkin puree mix until well combined.

  • Pour over the dry ingredients and mix.

  • Spread the mixture evenly onto baking sheets and bake it for about 22 to 25 minutes, stirring a bit near the halfway point.

  • Once it is golden brown, remove from oven and let it cool.

  • Once cooled add the cranberries and toasted coconut chips. Mix until well combined.

  • Store in airtight container. Enjoy with almond milk or in parfaits.
