Vegan Chocolate Mousse

A silky smooth and simple chocolate mousse you can make easily at home. Conventional mousses are made from eggs and whipped cream, as this is vegan recipe we are going to make it with aquafaba (liquid you get from can chickpeas)

Top it with your choice of fresh fruits, coconut cream and shaved chocolate

INGREDIENTS

  • 1 cup aquafaba (liquid from can chickpeas)

  • 1 tbsp powdered sugar

  • 1/2 tsp espresso coffee powder

  • 6 oz dark chocolate

  • Toppings- Your choice of fruit - Raspberry or pomegranate, coconut cream and shaved chocolate

DIRECTIONS

  • Add aquafaba and powdered sugar in big bowl

  • Beat the aquafaba liquid using an electric hand mixer until stiff peaks are formed (should take about 8 minutes)

  • Melt the chocolate using a microwave or on the stove using a double boiler. Let melted chocolate cool a bit

  • Add melted chocolate to whipped aquafaba along with espresso coffee powder

  • Carefully fold the liquid chocolate with whipped aquafaba using a spatula. Do not over mix or mousse will lose its air.

  • Add mixture into mason jars and refrigerate for 2 to 3 hours or overnight

  • Serve with some coconut cream, pomegranate (or your choice of fruits) and shaved chocolate.

  • Bon Appetit !!!
