Vegan Christmas Sugar Cookies

It surely is the most wonderful time of the year!!! These vegan sugar cookies are soft and decorated with vegan royal icing

I have used Christmas tree and snowflake cookie cutters but you can have fun with different cookie cutters.


These cookies are easy to make and roll out. Roll the dough onto parchment paper and refrigerate for at least half and hour or up to 2 hours before you cut and bake. This way dough will not crumble.


I will show you detail and step by step recipe with loads of picture. So lets begin!!!


Makes 12-14 cookies


INGREDIENTS

  • 1/2 cup vegan butter (room temperature)

  • 1/2 cup granulated sugar

  • 1 and 1/2 cup all purpose flour

  • 2 tbsp arrowroot starch

  • 1/2 tsp baking powder

  • 1 tsp cinnamon powder

  • 1 tsp vanilla extract

  • 1/2 tsp almond extract

  • 1 tbsp maple syrup

  • 1/4 cup chickpeas brine (aquafaba)

INSTRUCTIONS

  • Cream sugar and vegan butter until well combined


  • Add chickpeas brine, vanilla extract and almond extract. Beat for 5 minutes or until fluffy

  • Sift flour, arrowroot starch, cinnamon powder and baking powder

  • Mix dry ingredients and wet ingredients together, lumps are fine. Do not overmix. If mixture appears wet you can add little more flour

  • Gather dough into a disk. Divide dough into 2. Roll dough between 2 parchment sheets (approx. 1/4 inch thick)

  • Refrigerate 30 minutes or upto 2 hours

  • Peel off the parchment and cut out as many shapes as you can. I have used Christmas tree and snow flake cookie cutter but you can use any cookie cutters you like.

  • Transfer cut cookies onto a baking sheet lined with parchment paper.


  • Gather the scraps and re-roll and cut out few more cookies

  • Bake at 350 F for 9 to 10 minutes.

  • Let them cool on a baking sheet for 5 to 10 minutes before transferring on a cooling rack

Notes

  • Cookies can be stored at room temperature in an airtight container for 5 to 7 days.

  • You can chill the dough twice as well (especially if you have warm weather). Once before you cut out your cookies and then again after shaping your cookies.

Coloring Icing and Decorating Cookies


You can decorate these cookies using Vegan royal icing


I have used gel food coloring so it does not thin out my icing. Add 2 to 3 drops of gel food colour
